Healthy Banana Pancakes

Pancake day is on its way, so it’s only fair that I share a pancake recipe with you. Not only are these pancakes fluffy and delicious but they are healthy too! You know those poor brown bananas in your fruit bowl, well these are perfect for this recipe so don’t throw them away! Using only 4 ingredients to make the batter will hopefully mean you won’t need to head to the shops to buy anything. I have gone for frozen berries, granola, greek yoghurt and honey to top my pancakes but seeing as the batter is healthy, I think it would be rude not to add a dollop of Nutella…

INGREDIENTS:
(makes 5 small pancakes)

  • 1 mashed banana (best if it’s ripe)
  • 45g oats
  • 1 medium egg
  • 1/2 tsp baking powder
  • coconut oil for frying

METHOD:

  1. Put the banana and egg in a food processor and blitz. Then add the oats and blitz some more to form a thick batter. Heat the oil in a frying pan over a medium heat.

  2. Using a tablespoon, dollop 5 spoons of batter onto the pan. Flatten it slightly but you want the pancakes to be thick and fluffy – do not fear, they will cook through!

  3. Add all your ‘dollops’ to the pan, leaving them for 2 minutes before flipping and frying the other side for another 2 minutes. Depending on how thick your pancakes are, they may need more time to cook through so just leave them on a low heat.

  4. Pile your fluffy pancakes onto a plate, top with your favourite toppings.
